蔬菜可以冷藏在冰箱内几天?

随着生活节奏加快,许多上班族往往趁周末休息进行大采购,尤其是将一星期的蔬菜购买回以后,存放到冰箱里以图方便,但是你知不知道吃了这种存放几天的蔬菜是非常危险的,专家建议并提醒,新鲜蔬菜在冰箱内储存期不应超过3天,否则不利于身体健康。

长时间在冰箱里储存蔬菜非常危险,而危险也多来自蔬菜本身含有的硝酸盐,因为硝酸盐本身无毒,然而在储藏一段时间之后,由于酶和细菌的作用,硝酸盐被还原成亚硝酸盐,亚硝酸盐是一种有毒物质,它在人体内与蛋白类物质结合,可生成强致癌性的亚硝酸盐类物质。

储存蔬菜不仅会产生有害物质,而且会发生营养素的损失。试验证明,在30℃的屋子里储存24小时,绿叶蔬菜中的维生素C几乎全部损失,而亚硝酸盐的含量则上升了几十倍。

所以,新鲜蔬菜在冰箱内储存期不应超过3天。凡是已经发黄、萎蔫、水渍化、开始腐烂的蔬菜都不要食用,以免影响到身体健康。

Now I know vegetables best eat in 3days. I'll buy quite alot and keep in fridge. Not going to buy so much at once next time.

Usually, I keep vegetables in the fridge till they become spoilt. Sometimes I keep for more than five days then cook them. When I read this, realise should just keep vegetables less than three days. Never think that it'll be bad for our health.
